Easy Poached Chicken Recipe!



Poached Chicken yields a juicy, delicate flavor making it a natural for use in a wide variety of chicked dishes. While any method of cooking Chicken Breasts can be used as an ingredient in our chicken recipes: Sandwiches, Soups and Salads, we recommend poaching the chicken gently, as follows:

Poached Chicken Breasts

8 large Chicken Breasts, skin-on
32oz good Chicken Broth (1 box)
32oz Water
1 large Onion, peeled and quartered
2 large Carrots, cut into chunks
2 stalks Celery, large slices, leaves included, if possible
2 tsp Salt + 1 tsp Pepper
5 or 6 Cloves

Bring Chicken Broth and Water to a boil in a large pot.

Add Salt, Pepper and Cloves

Carefully place Chicken Breasts into the liquid and top with cut Vegetables.

Reduce heat to a gentle simmer for 20 minutes.

Take one Chicken Breast from the liquid and pierce it with a fork. If the juices run clear, it is done. If not, return it to the pot for a minute or two, then test again. Remove the remaining Breasts from the Pot and let them cool slightly before taking the skin off.

Now, place a piece of cheesecloth over a strainer and strain the poaching liquid into a large bowl.

In thirty minutes you have made 8 lovely chicken breasts and depending on the size of your meals, likely enough chicken to make four or five main dish, gourmet dinners such as cream chicken over rice or biscuits, chicken salad, chicken sandwiches/panini or a variety of salads with chicken strips. The gentle flavor will lend itself well to any number of sauces or dressings.

And you have approximately two quarts of fortified broth for chicken recipes: homemade soup, gravies or sauces. In just half an hour!
