Peanut Butter Frosting
by Kathleen

Given to us by Ina Garten, Kathleen's Peanut Butter Frosting is truly amazing. Smooth, creamy and not too sweet it compliments Ina's Chocolate Cupcakes perfectly. However, we think that once you make it, it will trigger your imagination for other uses!

So, what are we waiting for?

Let's Get Cooking!

Kathleen's Peanut Butter Frosting:

  • 1 cup confectioners' sugar
  • 1 cup creamy peanut butter
  • 5 tablespoons unsalted butter, at room temperature
  • 3/4 teaspoon pure vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/3 cup heavy cream

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.

How easy is that?

You just add all the ingredients except the cream to your mixing bowl and beat on medium-low speed until incorporated and creamy.

Note: please sift your confectioners' sugar first

The recipe calls for 1/3C Cream, which would make a thin icing. We slowly added less than half of that amount to reach a lovely, smooth frosting consistency.

Note: So add very small amounts of cream at a time to reach your desired consistency.

What could be more beautiful than that?

We used tip 2D and piped around the outer edge working our way to the center. Release pressure and lift up gently.

This is the easiest and least messy of any frosting we have ever made. It would be delicious as a Peanut Butter and Banana Sandwich, or on Pancakes or even as a Dessert Panini with strawberries and drizzled with chocolate. You are limited only by your own imagination when it comes to this Sweet Surprise!

Ina and Kathleen, thank you, thank you, thank you!
