Breakfast Smoothie

Start your day with a filling, nutritious and absolutely delicious Breakfast Smoothie.  It will give you an energy boost and help your body function smoothly all day!

One cup of spinach has nearly 20% of the RDA of dietary fiber, which aids in digestion, prevents constipation, maintains low blood sugar, and curbs overeating.

Spinach is also beneficial for  brain and nervous function with an abundance of vitamin K contributing greatly to a healthy nervous system and brain function by providing an essential part for the synthesis of sphingolipids, the crucial fat that makes up the Myelin sheath around our nerves.

Prunes are a natural laxative, stabilize blood sugar and like spinach, boost your immune system.  And, the walnuts help lower cholesterol and improve blood flow and are just delicious!

So why not begin the day with a beautiful, healthy breakfast?  It just makes sense!

So, What Are We Waiting For?

Let's Get Cooking!

Yield: 1 large Smoothie

Ingredients:

2 TSP Raw Walnuts

6       Prunes, pitted

1/2    Banana, frozen

2 C    Baby Spinach

1/2 C Almond Milk or Soy Milk

1/2 C Water, filtered

1 TBS Agave Nectar (optional)

1 C of Ice

If you have a VitaMix or other powerful blender, place all ingredients, in the order listed, and blend on medium (5) for between 30 seconds and 1 minute.  Add additional water or almond milk to get the consistency you like.

If your blender is not very powerful, place the walnuts in the blender first and "chop".  Then add the frozen banana, water, concentrate and almond or soy milk and "chop" again. Next the spinach and then add ice and optional ingredient and blend until Smoothie is well blended and smooth.

The VitaMix is a brand new piece of equipment in our kitchen so we were accustomed to making it in our Oster blender.  There is very little difference in the end product, it is simply quicker now.
