Garbanzo Flatbread



This amazing Garbanzo Flatbread is easy to make, delicious and super healthy with only two primary ingredients.  It is wonderful served straight from the oven with a little Parmesan grated on top, or without any topping.  Pictured is an example of our breakfast, lightly toasted in the toaster, with a little Carrot Butter.

We use an 11 x 16 baking pan with 3/4" rim, however it can be made just as well in a large, oven proof skillet.  If you don't have a large skillet or baking pan you can use a smaller one and cook it in two batches.

In a medium-large bowl place

2-1/2 C Garbanzo Bean Flour

3-1/2 C Water, filtered

1 tsp salt and pepper to taste

Whisk ingredients until well combined.  Then let it sit on your counter for 4 hours - if it has to be longer, it won't hurt it.  

Prior to baking, preheat oven to 350 degrees. Spray your pan with non-stick spray and then drizzle with a bit of Olive Oil.  Lightly skim the top of the mixture to remove the coating of foam that forms on top.

If you wish, you can sprinkle Italian Seasoning (Rosemary, Oregano, Thyme) or fresh Basil.  A sprinkling of Herbs de Provence is also a nice touch.

When baked there will be fine little cracks in it but these do not cause it to crumble or fall apart.  It tastes absolutely wonderful warm, right out of the oven, but can be reheated or my favorite is to let it cool and toast slices in the toaster.

It lends itself well to cutting into different shapes and can be used as a dipping bread (just be careful what you choose to dip them in!)  Since Garbanzo Beans are a high fiber food, it doesn't take much to fill you and help control your hunger levels.
