Hummus Recipe
So good

This is Hummus Recipe is very easy to make. The quickest way is to use canned Garbanzo Beans (Chickpeas) or you may prefer to soak and cook your own as we do.  Besides the fresh flavor, good reasons to make your own are that you can adjust the texture as well as the flavor to your preference and it is considerably less expensive for a much better product.

So simple. So delicious!

Please be sure to make this  exactly to your taste. The following is the way we like it:

Ingredients:

4 C Garbanzo Beans, rinsed and drained

2-6 Cloves of Garlic (we use 6)

2 Tbs Onion

1/2 C Lemon Juice, fresh if possible

1/2 C Tahini

1 tsp Beau Monde ( or Cumin if you prefer)

Salt to taste (1/2 - 1 tsp)

In a food processor or high powered blender (we use our food processor) place the onions and garlic.  Scrape down the bowl a couple of times.  Add the Garbanzo Beans and Lemon Juice and process.  When it is getting close to the texture you like, add the Tahini and seasonings.  Process until integrated.

This Hummus Recipe makes 4-1/2 cups and will store well in the refrigerator for two weeks (if it lasts that long).  Use it as a Dip with Veggies or Crackers, as a Spread on Rice Crackers for a quick, healthy lunch, stuff cherry tomatoes with it for a little holiday flair (sprinkled with finely chopped parsley), or use it to flavor wraps or sandwiches in place of mayonnaise. We added a small red ornament and two basil leaves to look like a bit of Holly. You could also sprinkle finely chopped red and green bell peppers on the top.

We find this wonderful to have on hand, especially during busy times, so that we have something FAST and easy when we dash in the door famished.  This also makes a wonderful snack to have BEFORE you go to a party or dinner where you know that a lot of unhealthy food will be served, since it is very filling.

Buon Appetito!
