What is more delicious than Healthy Soups made from scratch? The colors are beautiful, a lovely aroma fills your home and the end result is satisfying, delicious and filled with nutritive value. Who doesn't like that?

Even healthful versions can be creamy, rich and delicious either packed with vegetables or pureed until smooth.  Some, for example Cauliflower or Zucchini are so velvety that you would guess that there was cream or milk in it.  Surprisingly, there is no dairy in any of our recipes.

Making Vegetable Broth from scratch using scraps of vegetable peels and end pieces, onion skins, potato peels, celery, carrot and fennel leaves makes an already cost effective meal even more so.  The possibilities are endless.


This extra creamy Cauliflower Soup is so delicious that it can also be served as a Cream Sauce over vegetables or on a Baked Potato.  It is a real comfort food great on cold evenings.






Satisfying to even the heartiest appetite is Vegan Minestrone. Packed with nutrition and filling, it comes together quickly once the vegetable prepping is done.



Smooth and silky Cream of Broccoli Soup is subtle, tasty and easy to make.  We serve it side by side with our Vegetable Bowl the first night. Later we will ladle it over a Baked Potato or load the leftover soup with leftover steamed vegetables which makes a *new dish* just as delicious as the first time we served it.




Make it cream style or not, this Roasted Tomato Soup is luscious, quite easy to make and will be on your family's list of favorites.  With a Vegetable Sandwich this is our favorite Friday night meal.




When I was making Zucchini Soup the first time *hubbie* came into the kitchen and told me that he was not all that fond of zucchini. When he tasted his first bite he said "ok you can make this again, tomorrow!"
